How To Calculate The Protein Content Of Flour For Your Sourdough Bread

Sometimes the label on flour packaging doesn’t show the protein content as a percentage. Here is some simple math to figure it out.

To calculate the protein content of flour, locate the nutritional information on the package and determine the grams of protein per serving size (usually 100g). If the serving size is not 100g, use the following formula: (grams of protein / grams of serving size) * 100 = percentage of protein. For example, if there are 4 grams of protein in a 30g serving, (4 / 30) * 100 = 13.33% protein.

Here’s a step-by-step breakdown:

  1. Find the Serving Size: Look at the nutrition facts label on the flour package and identify the serving size.

  2. Determine Protein Content: Find the number of grams of protein per serving.

  3. Calculate Percentage:
    • If serving size is 100g: The protein content is directly the percentage (e.g., 12g protein per 100g = 12% protein).
    • If serving size is NOT 100g: Divide the grams of protein by the grams of serving size and multiply by 100.
    • Example: If there are 4g of protein in a 30g serving: (4 / 30) * 100 = 13.33% protein
